Sous Vide Tri-tip with Cowboy Rub

1 Well-marbled tri-tip steak
Olive oil
Cowboy rub for Steaks

Vacuum seal the unseasoned steak and cook in water with an immersion circulator set to 131 degrees F for 8 hours.

Remove the steak from the bag and pat dry.
Apply a coating of olive oil, then season generously with the cowboy rub. Let sit 20 - 30 minutes before grilling over a rippin-hot charcoal fire.
