3 T kosher salt
2 T finely ground coffee beans
1 T unsweetened cocoa powder (I like HERSHEY'S SPECIAL DARK)
1 T ground ancho chile or other mild chile powder
1 T freshly ground black pepper
1 T ground cumin
1 T brown sugar
1 t garlic powder
1 t smoked paprika (optional - for a smokey flavor)
Stir all ingredients together. Store in an air-tight container.
To use: Brush steaks with olive oil, then coat with cowboy rub. Let sit for 20 minutes before grilling.
