Yam Mallow Crisp

AKA Yam Mallow Crip

The classic sweet-potatoes-and-marshmallows thing.

Yes, canned "yams" are really not yams, they're sweet potatoes, but "sweet potato mallow crip" just doesn't have the same ring to it.

2 cans yams (or 1 large can)
1/4 cup orange juice
3/4 cup flour
1/2 cup brown sugar
1/2 t cinnamon
a dash of salt
1/2 cup butter
1 1/2 cups mini marshmallows

Preheat oven to 350.
Drain the yams and arrange them in a greased casserole dish.
Pour the orange juice over the yams.
Mix the flour, sugar, cinnamon, and salt together in a mixing bowl.
Cut in the butter with a pastry cutter or a fork (or your impeccably clean fingers) until the mixture is crumbly.
Sprinkle the flour mixture over the yams and bake for 30 minutes.
Cover the top with marshmallows and bake until browned.
(You can broil it, but watch it closely!)
