These tortillas are made with White Whole Wheat flour which is a lighter, milder-tasting whole wheat flour.
11 ounces (2 3/4 cups) King Arthur White Whole Wheat flour
1 T King Arthur Vital Wheat Gluten
1 t salt
1 t sugar
6 T Olive Oil
3/4 cup + 2 T warm water
Combine flour, wheat gluten, salt, and sugar in a food processor.
With processor running, pour in the olive oil, then the warm water.
Process until a dough ball forms.
Remove and form into a disk. Cut into 16 portions.
Roll each piece into a smooth ball and cover with plastic wrap.
Let sit at room temp for at least 1/2 hour for the gluten to relax.
