For 4 cocktails:
6 ounces vodka
6 ounces cucumber juice
3 ounces Midori
1 ounce fresh lemon juice
1 ounce fresh lime juice
1 ounce simple syrup
For cucumber juice:
Wash and dry fresh cucumbers. If the cucumbers are waxed, peel them.
Remove and discard the ends (in case the ends are bitter), then puree the cucumbers in a blender.
Pour into a glass bowl through a strainer. Push on the solids to extract as much juice as possible.
To make the cocktails:
Combine all ingredients in a large cocktail shaker.
Add ice. Shake. Strain into glasses.
Garnish with cucumber slices or strips.
