2 T milk
1/8 t garlic salt
1/8 t dry mustard
a big pinch kosher salt
fresh ground black pepper - to taste
a couple squirts tabasco or other hot sauce
a little bit of freshly grated nutmeg
1.5 to 2 ounces grated cheese*
* I used a combination of sharp cheddar, blue cheese, and parm.
Pre-heat oven to 375.
Beat eggs with milk, garlic salt, dry mustard, salt & pepper, tabasco, and nutmeg.
Spray a custard cup with non-stick spray.
Pile the cheese into the custard cup. It should fill it about half full. Maybe a smidge more.
Put the custard cup onto a cookie sheet and pour in the egg mixture.
Bake for 25 minutes, or until browned and puffed 2 inches above the rim of the dish.
There will still be a little bit of gooey cheesy goodness in the very center.
Try not to burn yourself as you devour it!
