Based on an idea by Aunt Janet. All of the ingredients are raw and unseasoned unless otherwise noted.
2 C rolled oats
1/2 C coconut shreds
1 C Quinoa flakes (can’t find flakes? Grind the quinoa)
1/2 C ground flax seeds
1/2 C sunflower seeds
1 C pumpkin seeds (pepitas)
1 C sliced almonds
1 C chopped walnuts
1 C chopped pecans
1 T cinnamon
1/2 C dried Michigan cherries
1/2 C dried cranberries
1/2 C coconut oil
1 C honey
1 t vanilla
Preheat oven to 300F.
Mix all dry ingredients in a large bowl. Melt coconut oil and honey together for easier mixing, then add all wet ingredients to dry and mix until coated. Separate out onto two foil lined and greased baking sheets to avoid sticking. Bake at 300F for 15 minutes, take muesli out and stir. Repeat three times. Total baking time is 45 min or less. Let cool and enjoy!
I like to mix mine with vanilla Greek yogurt.
