Garlic Scape Pesto

1 bunch garlic scapes, chopped (about 2 cups, 6.5 ounces by weight)
1/2 cup shelled pistachios or toasted pine nuts
Optional - 1/2 cup fresh basil leaves
2 tablespoons water
1/3 cup olive oil
1/2 cup grated parmesan cheese
salt to taste

Combine garlic scapes, nuts, and basil in food processor.
Process until well chopped.
With the processor running, pour in the olive oil and water.
Stir in parm by hand and season to taste with salt (about 1 big 3-finger pinch).
