Sliced water chestnuts would also be good in this, but Steve hates them
Oil as needed (I use canola)
2 boneless, skinless chicken breasts halves, cut into small pieces or strips
2 stalks of celery, sliced (optional)
1/2 white onion, diced (optional)
2 green onions, chopped (both white and green parts)(optional)
Bubba's Stir-fry sauce
Make the stir-fry sauce.
Make some rice.
Stir fry chicken (in batches, if necessary to avoid crowding the pan) in a non-stick skillet in a small amount of oil.
Remove each batch to a bowl as you finish.
Stir fry the onions and celery in same skillet in a small amount of oil.
Put the chicken back into the skillet with the veg and pour on the sauce.
Let it bubble for a minute or two.
Sprinkle with chopped green onions and serve with rice.
